Päivän ruoka/ food of the day (5)




Jatketaan merellisissä herkuissa. Ihmiset ovat kautta aikojen syöneet mereneläviä, esihistoriallisesta ajasta nykypäivään. Talon isäntä tässä muistelee herkullista mustekalaruokaa, jota hän söi matkoillaan Välimeren seudulla. Resepti on 1400-luvun Napolista.

Let's continue with marine food. Humans have always eaten seafood - from prehistoric times to present. The master of the manor recalls delicious octopus which we was eating during his travels to the Mediterranean. The recipe is from 15th century Naples:

"If it is alive, beat it forcefully on a stone with a club; then get a little hot water, blanch the octopus well, cut it into bite-sized pieces a finger's length long, and put them into a pot with some oil on top of the coals away from the fire; do not put in water, rather cook them very slowly in oil; then get a little fried onion and fragrant herbs and spices, vertices and a little water, mix everything together and boil it a short while; then serve it".
